When my husband and I camp, I love planning meals ahead of time. Don't get me wrong, we often opt out for the simple brat or hotdog, but I really enjoy spending my free time cooking.
One thing to keep in mind, we only have 2 coolers. One for drinks, and one for food. That may seem like a lot, but we often don't come across a larger grocery store for a few days, so we are preparing for four days of eating. Thats breakfast, lunch, dinner, and snacks! This recipe is great because there are only a few ingredients that need to stay cool. The kale, italian sausage, and heavy cream. The potatoes, onion, chicken broth, and seasonings can all be kept in a seperate storage bin. We have a propane camp stove we use, which really comes in handy!
