Maple Bacon Cupcakes.

I've come to the conclusion that all males, young or old, love this cupcake!

I've heard comments like:  " I don't like cupcakes, but anything with bacon, I'M ALL OVER IT ! "

 

These cupcakes, are soft and fluffy! I have tried a dozen different cake recipes, but this one always gets the best feedback. I like to bake things that people want to eat. So I had to snuffle my snobbery to boxed cake and make it my own by amping it up!

1 package of bacon

Wrap baking sheets in foil and place cooling wrack on top

lay out bacon and rub on brown sugar 

bake at 425 until almost crispy

flip bacon, continue baking until crispy

Chop up once cooled and add 3/4 of it to the cake batter

(use the rest for garnish)

1 box white or yellow cake mix

1 c. flour

1 c. sugar

1 c. sour cream

1/4 c. vegetable oil

4 eggs

a pinch of salt

2 tbsp vanilla

Icing: 

3-5 Tbsp of milk

3-4 cups powdered sugar

2 sticks of butter, room temp

1 tbsp maple flavoring

I like my icing to have a stronger butter flavor so I don't add as much powdered sugar and milk.

If you like a sweeter buttercream use more!

whip butter for 7-8 minutes ( the color will lighten and become fluffier and creamier )

start by adding 1 c. powdered sugar and 1 tbsp of milk until you get the right consistency.

Add 1 tbsp of maple flavoring

pinch of salt

whip for 5 minutes until light and fluffy

I always taste my icing throughout so I know I am going to love the flavor!

Fill piping bag, I used a large star tip. Not sure which one!

Add bacon on top for garnish

 

 

These were a hit for fathers day!
